Air Fryer Chicken with Sweet Potatoes and Cottage Cheese

Ingredients:

For the Chicken:

  • 1 boneless, skinless chicken breast (6–8 oz)

  • 1 teaspoon olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

  • Optional: fresh chopped parsley or chives for garnish

For the Sweet Potatoes:

  • 1/2 medium sweet potato, peeled and diced

  • 1 teaspoon olive oil

  • Salt and pepper to taste

  • Optional: pinch of cinnamon or paprika for extra flavor

For the Cottage Cheese:

  • 1/2 cup cottage cheese (full-fat or low-fat based on preference)

  • Optional: chopped green onions, chives, or black pepper on top

Instructions:

1. Preheat the Air Fryer:
Preheat the air fryer to 375°F (190°C) for 3–5 minutes.

2. Prepare the Chicken:
Rub the chicken breast with olive oil, garlic powder, smoked paprika, salt, and pepper. Let it sit while you prep the potatoes.

3. Prepare the Sweet Potatoes:
Toss the diced sweet potatoes with olive oil, salt, and pepper. Add optional seasoning like cinnamon or paprika if desired.

4. Cook in Air Fryer:
Place the chicken and sweet potatoes in the air fryer basket. Cook for 20–25 minutes, shaking the basket or flipping the chicken and potatoes halfway through. Check that the chicken reaches an internal temperature of 165°F (74°C).

5. Serve:
Slice the chicken and plate with the sweet potatoes. Add a scoop of cottage cheese on the side and top with optional chopped chives or green onion. Serve immediately.
