Baked Salmon with Roasted Broccoli and Sweet Potatoes

Ingredients:

  • 1 salmon fillet (about 6 oz)

  • 1 cup broccoli florets

  • 1/2 cup sweet potatoes, peeled and diced

  • 1 tablespoon olive oil

  • Salt and freshly ground black pepper, to taste

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon paprika (optional)

  • Fresh lemon wedge (optional, for serving)

Instructions:

1. Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

2. Prepare the Vegetables:
In a mixing bowl, toss the broccoli and diced sweet potatoes with half the olive oil, a pinch of salt, pepper, and garlic powder. Spread them out evenly on one half of the baking sheet.

3. Prepare the Salmon:
Place the salmon fillet on the other half of the baking sheet. Drizzle the remaining olive oil over the fish, and season generously with salt, black pepper, and a pinch of paprika for color if desired.

4. Bake:
Place the baking sheet in the oven and roast for 20–25 minutes, or until the salmon is cooked through and flakes easily with a fork. The sweet potatoes should be fork-tender and slightly crisp on the edges, and the broccoli lightly browned.

5. Serve:
Transfer everything onto a plate. Optionally, squeeze a bit of lemon over the salmon before serving.
