1 boneless, skinless chicken breast (5–6 oz)

1 cup asparagus spears, trimmed

6–8 olives (Kalamata or green), sliced

1 tsp garlic powder

Salt & black pepper to taste

Cook the Chicken
Season chicken with garlic powder, oregano, salt, and pepper.
Heat 1 tbsp olive oil in a skillet over medium heat.
Cook chicken for 6–7 minutes per side until golden and fully cooked.
Rest for 2 minutes, then slice. -
Prepare the Asparagus
In the same pan, add asparagus with a drizzle of olive oil.
Sauté for 4–5 minutes until tender-crisp. Season lightly. -
Dress the Spinach
Place fresh spinach on a plate.
Drizzle with olive oil and a pinch of salt. Toss gently. -
Assemble the Plate
Arrange spinach as the base.
Add sliced chicken and asparagus.
Top with feta cheese and olives.
Finish with lemon zest or a squeeze of lemon if desired.
