Keto Chicken Plate with Spinach, Asparagus & Feta

🧾 Ingredients

  • 1 boneless, skinless chicken breast (5–6 oz)

  • 1 cup fresh spinach

  • 1 cup asparagus spears, trimmed

  • 2 tbsp olive oil (extra-virgin)

  • ¼ cup feta cheese, crumbled

  • 6–8 olives (Kalamata or green), sliced

  • 1 tsp garlic powder

  • ½ tsp dried oregano

  • Salt & black pepper to taste

  • Optional: lemon zest or lemon juice

👩🍳 Instructions

  1. Cook the Chicken
    Season chicken with garlic powder, oregano, salt, and pepper.
    Heat 1 tbsp olive oil in a skillet over medium heat.
    Cook chicken for 6–7 minutes per side until golden and fully cooked.
    Rest for 2 minutes, then slice.

  2. Prepare the Asparagus
    In the same pan, add asparagus with a drizzle of olive oil.
    Sauté for 4–5 minutes until tender-crisp. Season lightly.

  3. Dress the Spinach
    Place fresh spinach on a plate.
    Drizzle with olive oil and a pinch of salt. Toss gently.

  4. Assemble the Plate
    Arrange spinach as the base.
    Add sliced chicken and asparagus.
    Top with feta cheese and olives.
    Finish with lemon zest or a squeeze of lemon if desired.
