Scrambled Eggs

2 large eggs

2 tbsp shredded cheese (cheddar, mozzarella, or blend)

Make the Pancake Batter
In a bowl, whisk oat flour, protein powder, baking powder, egg, and almond milk until smooth. -
Cook the Pancakes
Heat a non-stick skillet over medium heat.
Pour batter into small pancakes and cook 2–3 minutes per side until golden. -
Prepare the Scrambled Eggs
Heat butter or olive oil in a pan over low-medium heat.
Add eggs, gently scramble, then fold in cheese until melted and creamy. Season lightly. -
Assemble the Plate
Stack pancakes, drizzle with honey, and top with fresh strawberries.
Serve scrambled eggs with cheese on the side.
