🧾 Ingredients

Protein Pancakes

  • ½ cup oat flour or protein pancake mix

  • 1 scoop vanilla protein powder

  • 1 large egg

  • ½ cup almond milk (or milk of choice)

  • ½ tsp baking powder

  • 1 tsp honey (for topping)

  • Fresh strawberries, sliced

Scrambled Eggs

  • 2 large eggs

  • 2 tbsp shredded cheese (cheddar, mozzarella, or blend)

  • 1 tsp butter or olive oil

  • Salt & pepper to taste

👩🍳 Instructions

  1. Make the Pancake Batter
    In a bowl, whisk oat flour, protein powder, baking powder, egg, and almond milk until smooth.

  2. Cook the Pancakes
    Heat a non-stick skillet over medium heat.
    Pour batter into small pancakes and cook 2–3 minutes per side until golden.

  3. Prepare the Scrambled Eggs
    Heat butter or olive oil in a pan over low-medium heat.
    Add eggs, gently scramble, then fold in cheese until melted and creamy. Season lightly.

  4. Assemble the Plate
    Stack pancakes, drizzle with honey, and top with fresh strawberries.
    Serve scrambled eggs with cheese on the side.
